Breakfast Sous Chef

Mornings are this kitchen's moment, and it needs a seasoned Breakfast Sous Chef to lead them. A growing hospitality business on the NSW coast wants someone to take charge of its morning service and work side by side with the Head Chef.

Here your input carries real weight: you will develop the breakfast offering, guide a compact team, refine how the kitchen operates and keep each service flowing. On offer is $80,000 + superannuation, a permanent full-time contract and 38 hours spread across five days, with two consecutive days off every week. With starts at approximately 6:00am, your afternoons are largely your own. The setting is a beautiful coastal region, ideal if you want career progression alongside a lifestyle change, and a considered move for chefs in Dubai or Doha ready for a different pace.

Key Responsibilities

  • Lead the morning kitchen every day, running breakfast prep and service to a high standard
  • Work closely with the Head Chef to set food direction and manage operations
  • Oversee a brigade of up to five breakfast chefs, coaching and developing the junior members
  • Shape new breakfast dishes and seasonal specials, and refine the existing menu
  • Hold presentation, portion sizes and food quality steady across every service
  • Coordinate the day's preparation so that mise en place is complete before service
  • Control stock: ordering, rotation, levels and wastage
  • Protect hygiene, cleanliness and food safety, and keep the kitchen flowing efficiently during busy breakfast rushes
  • Look for better systems and processes and put improvements in place
  • Step in for the broader kitchen when needed, and model a respectful, motivated, professional culture

Requirements & Eligibility

  • Minimum 2–5 years' experience in a senior chef role or as a Sous Chef, with a demonstrated background in kitchens focused on breakfast or brunch
  • Strong command of modern Australian café-style and breakfast cuisine, backed by strong prep and plating skills
  • Previous experience supervising or leading kitchen staff, and the capacity to mentor, train and motivate junior chefs
  • Good knowledge of food safety and hygiene requirements in a kitchen
  • Hands-on experience controlling stock, placing orders and keeping food wastage low
  • Strong time-management and organisational abilities, together with confident communication and leadership
  • Effective during busy service and comfortable starting early in the morning
  • A team-oriented, reliable, professional attitude and commitment to a long-term career within Australian hospitality
