An established Victorian meat and poultry operation has a Full-Time Butcher position for a tradesperson equally confident in commercial meat preparation and retail production. It calls for an experienced butcher with genuine hands-on capability, covering everything from carcass breakdown and precision cutting to value-added products, quality control and customer orders.

Key Responsibilities

  • Break down carcasses of various meat types and carry out precise cutting, trimming, grinding and portioning
  • Produce sausages and other processed lines, seasoning, smoking and marinating meat where required
  • Prepare cuts to gourmet retail presentation standards and keep retail displays attractive
  • Run slicers, grinders and the rest of the meat-processing machinery
  • Weigh, pack, price and label products accurately
  • Inspect meat and finished goods for consistency and quality
  • Fill customer orders accurately and efficiently
  • Track stock levels, help manage inventory and keep production, stock and inventory records
  • Clean and look after knives, equipment and prep areas, following food safety, hygiene and workplace safety procedures in a clean, organised, compliant workplace

Requirements & Eligibility

  • Certificate III in Meat Processing or relevant qualification
  • Minimum 3 years of relevant professional experience, with demonstrated carcass breakdown experience
  • Strong meat-cutting and commercial knife skills
  • Experience making sausages and other meat products, and competence using slicers and meat-processing equipment
  • Sound knowledge of hygiene and food safety practices and an understanding of workplace health and safety requirements
  • Experience managing stock and inventory
  • Ability to work to customer specifications and order requirements, with strong attention to accuracy, quality and presentation
  • Ability to demonstrate industry experience that is genuine, relevant and verifiable
