Chef and Cook

A long-running, busy hospitality business in Queensland has several permanent openings for seasoned Indian cuisine specialists: Indian Curry Chefs/Cooks, Tandoori Chefs/Cooks and Indian Cuisine Sous Chefs.

The kitchen moves quickly, and you will be expected to turn out genuinely authentic dishes while keeping food quality, presentation and kitchen operations at a high level. Overseas applicants who are suitably qualified and meet Australian visa requirements can be sponsored.

Key Responsibilities

  • Produce a full authentic Indian menu, from curries, sauces and tandoori items to breads, rice, entrees and desserts, and run and look after traditional tandoori ovens where applicable
  • Follow set recipes, portions and plating standards, and keep an eye on prep and presentation so every plate is consistent
  • Help shape the menu with food and labour costs in view, and map out daily and weekly production with management
  • Hold stock at the right level, keep wastage low and check that ingredients are fresh and of good quality before they are used
  • Keep food in temperature-controlled storage and maintain high standards of hygiene, cleanliness and workplace safety
  • Guide, train and support junior kitchen staff where required
  • Respond professionally to customer feedback and any concerns about food quality
  • Keep kitchen equipment in good order and all work areas clean and hygienic
  • Stay organised, manage time well and work efficiently in a fast-paced commercial kitchen

Requirements & Eligibility

  • Minimum three years of experience cooking authentic Indian cuisine, with in-depth knowledge of authentic recipes and traditional Indian cooking techniques
  • A background as an Indian Curry Chef, Tandoori Chef, Indian Cook or Sous Chef, together with a relevant Commercial Cookery or Hospitality qualification suited to the position
  • Capable of working efficiently in a fast-paced, high-volume kitchen, and well organised with excellent communication skills
  • A firm commitment to food safety, hygiene and workplace health and safety standards, and the ability to supervise and train junior kitchen staff where required
  • A positive skills assessment is required for overseas applicants
  • An IELTS score of 5.5 or 6.0 in each module, or an equivalent PTE score, is required for overseas applicants
