Years spent in busy commercial kitchens deserve a role that asks for more from you than just cooking. This New Zealand opening is for seasoned culinary professionals ready to take ownership of the food that leaves the pass, the people on the line and the way the kitchen runs day to day.
You will apply the capability you already have while building it further across menu development, supplier coordination, stock management, restaurant operations and kitchen leadership. Applicants are judged on their track record, their professional history and whether they can operate at senior standard; those who perform well can expand their remit and progress inside the business. Chefs currently working in Dubai, Doha or Riyadh are as welcome to apply as anyone else.
Key Responsibilities
- Answer for consistent presentation and quality on every plate, preparing, cooking and finishing dishes in line with set recipes and what service demands
- Judge each ingredient on suitability, quality and freshness
- Take care of prep work, whether that means chopping, cleaning, seasoning, blending, cooling or heating, while monitoring temperatures and cooking times
- Adapt preparation techniques for special and dietary food needs
- Steer kitchen activity through prep and service, offering practical help and clear direction to colleagues
- Support the leadership of a kitchen team of up to 12 people during daily operations, stepping across sections whenever the operation needs it
- Review delivered stock, flag anything below standard, and see that ingredients are stored and maintained properly
- Monitor equipment requirements, kitchen inventory and food supplies, and support purchasing and supplier coordination
- Contribute fresh menu ideas and new recipes, and improve dishes already on offer
- Run kitchen processes accurately and consistently, using the relevant digital tools for operational reporting and accountability
- Track food usage to help hold down food costs, and help keep an eye on labour and operational efficiency
- Raise relevant matters about kitchen performance with management
- Foster a team culture that is professional and positive
- Keep standards high whether trading is quiet or flat out
- Identify issues in the operation and take suitable action to fix them
- Maintain equipment, hygiene and cleanliness standards, stick to food safety requirements and workplace procedures, and contribute to better systems and service in the kitchen
Requirements & Eligibility
- Minimum 3 years' professional kitchen experience, built up in commercial kitchens, hospitality venues or established restaurants
- A proven record in a responsible or senior kitchen role, supported by a genuine work history relevant to this job that can be verified
- Hands-on cooking and food preparation ability you can show in practice, solid command of professional kitchen procedures, and confidence working across several sections
- Proven capacity to support and coordinate other kitchen staff; previous experience leading or supervising a kitchen team is highly desirable
- A good grasp of presentation and food quality standards, plus knowledge of safe food preparation and dietary requirements
- Practical experience handling kitchen supplies, inventory and stock control
- Some understanding of operational efficiency and food costs is advantageous, and a history of assisting with recipe creation or menu development is also advantageous
- Composure and efficiency when service gets pressured
- Good communication and a team-first approach, including productive working relationships with management and suppliers
- A professional outlook, readiness to own your responsibilities, and openness to learning the digital tools the restaurant uses for reporting and accountability
- Fluent English across speaking, writing and reading
- Capacity to supply documents supporting your professional experience and qualifications
- You must meet applicable New Zealand employment and visa requirements; eligible candidates can be offered sponsorship
