A professional hospitality operation on the New South Wales South Coast is looking for an experienced Sous Chef or senior culinary professional to strengthen its kitchen leadership.
Moving into a Sous Chef seat takes more than good technique. It calls for consistency, leadership, sound organisation and the composure to take responsibility when service is under pressure. You will lift daily kitchen performance, back the senior chefs and lead the brigade in delivering high-quality food and service. Your qualifications, experience and practical ability will need to be clearly demonstrated and verified.

Key Responsibilities
- Direct and coordinate the kitchen through each day's service, taking full charge of operations when the senior chefs are away
- Work with the senior chefs on menu planning and kitchen preparation, and help introduce new and seasonal menu items
- Cook and present dishes to the established quality standards, organising plating so every dish is ready on time
- Oversee and guide the kitchen team through busy periods
- Train staff in kitchen procedures, food preparation and safe ways of working
- Enforce strict food safety, hygiene and HACCP standards, keeping work areas clean, organised and compliant with health standards
- Watch stock levels, plan preparation around operational requirements and assist with inventory management, food costing and waste reduction
- Check quality, consistency and presentation before food goes out
- Help look after kitchen equipment and report any maintenance needs
- Liaise with front-of-house staff for efficient service and look for ways to improve kitchen efficiency and food quality
Requirements & Eligibility
- At least 2 years' experience in a Sous Chef, Senior Chef or equivalent role, with professional culinary experience that is suitable for independent verification
- A relevant culinary qualification or apprenticeship, or as a minimum a Certificate III in Commercial Cookery or equivalent
- Strong practical command of commercial food preparation and cooking techniques
- Knowledge of HACCP, food safety and hygiene requirements
- Valid NSW Food Safety Certificate and current food handling certification
- Proven experience supervising or leading kitchen personnel
- Able to hold food quality consistent in a high-pressure environment
- Strong time management, planning and organisation, together with experience in stock control, food costs and minimising kitchen wastage
- Strong teamwork and communication capabilities, a professional attitude and a genuine commitment to culinary standards
- Able to work full-time in New South Wales, with sponsorship available for the successful applicant
