A premium hospitality operation in Melbourne, Victoria, is adding an accomplished Senior Chef to its kitchen leadership team. The role suits someone whose career has moved past purely hands-on cooking and who is ready to lead people, hold exceptional standards and help shape where a professional kitchen is heading.

You will join seasoned culinary colleagues for whom precision, consistency and technical excellence are non-negotiable. Your background, qualifications and achievements will carry real weight in selection, and preference goes to candidates who can clearly evidence high-end culinary work; time in Michelin-starred or comparable international fine-dining kitchens is highly regarded.

Applicants must currently be working in Australia with a valid visa, making this a considered career step for senior chefs already in the country.

Key Responsibilities

  • Direct the brigade through prep and service, keeping a close eye on how dishes are prepared and cooked as the night unfolds
  • Coach and grow junior and commis chefs through supervision, hands-on training and ongoing mentoring
  • Protect an exceptional level of quality, consistency and presentation on every plate
  • Back the Head Chef in the daily running of the kitchen
  • Help shape menus, recipes and new dishes, from first idea through to implementation, as part of ongoing culinary innovation
  • Make sure the whole team applies kitchen procedures the same way every time
  • Handle ingredient orders, stock levels and rotation, and help with food costing and keeping kitchen resources under control
  • Keep compliance and operational records accurate, and hold food safety, hygiene and workplace health standards steady
  • Work in step with front-of-house colleagues throughout service
  • Find ways to lift efficiency and culinary standards, setting the tone for a disciplined, respectful and professional kitchen

Requirements & Eligibility

  • Minimum 5–7 years' experience in professional kitchens, plus minimum 2–3 years' experience in a senior chef, sous chef or supervisory capacity
  • A proven record in fine dining, Michelin-starred or equivalent high-end culinary settings, showing clear career progression and growing responsibility
  • Strong technical skill across contemporary cooking methods, with an understanding of current food trends and sustainable kitchen practices
  • Proven ability to lead and develop a team, and to train, mentor and motivate kitchen staff
  • Strong knowledge of kitchen compliance, hygiene and food safety
  • Excellent organisational and communication skills, and a strong commitment to consistency, quality and continuous improvement
  • The composure to keep standards high when service gets demanding
  • Experience handling inventory management, kitchen costing and stock control
  • A relevant culinary qualification, apprenticeship or equivalent professional training preferred
  • Currently working in Australia with a valid visa, and able to supply appropriate evidence of your qualifications and professional experience
