Key Responsibilities
- Cook authentic Japanese dishes with consistency and careful presentation
- Make sushi and sashimi using professional prep and knife technique, and handle seafood preparation and cold-section mise en place
- Work the grill, fryer, pan and yakitori sections to produce Japanese hot dishes
- Choose, prepare and handle ingredients to professional kitchen standards, with precise portions and consistent plating
- Have daily prep finished before service begins
- Store food properly, protecting freshness and rotating stock
- Meet food safety, hygiene and sanitation requirements at all times, keeping prep and cooking areas clean, organised and ready for service
- Stay quick and accurate through high-volume service, coordinating with other kitchen staff so service runs smoothly
- Move between kitchen sections as operations require, showing discipline, professionalism and attention to detail while supporting the wider team day to day
Requirements & Eligibility
- Minimum 3 years of professional experience in Japanese cuisine
- A proven employment history in Japanese restaurants, sushi establishments, izakaya or comparable commercial kitchens
- Demonstrated practical skill in sushi, sashimi or Japanese hot food preparation, including strong knife work and seafood handling experience
- Able to demonstrate genuine hands-on culinary experience relevant to the role, and to provide appropriate evidence supporting your professional experience and culinary skills
- Background in a fast-paced professional kitchen, keeping quality and consistency steady through busy services
- Good understanding of food safety, hygiene and professional kitchen practices
- Reliable, punctual and professional, with strong communication and the ability to work as part of a kitchen team
