A long-standing Sydney hospitality group wants a senior culinary leader who has already run large kitchen operations and delivered dependable results across several venues.
The remit is substantial: seven food and beverage outlets, more than 60 kitchen staff and over 12,000 meals produced each week. Strong cooking is assumed. What matters just as much is your ability to lead teams, make commercial calls, keep operations under control and deliver consistently.
You will need a genuine history of senior kitchen responsibility, backed by employment and career records that can be verified. For experienced executive chefs running large operations in Dubai, Doha or Riyadh, this is a considered next career step.
Key Responsibilities
- Oversee kitchen operations in all seven food and beverage outlets
- Lead, supervise and develop a kitchen workforce of more than 60 people
- Keep food quality, presentation and service consistent from venue to venue
- Guide menu development and coordinate how new menus are rolled out across the operations
- Manage food costs, labour spend, purchasing and inventory
- Track kitchen budgets and contribute to the group's profitability
- Recruit and grow kitchen professionals at every level
- Put effective kitchen systems, procedures and performance standards in place
- Monitor food safety, workplace health and safety and regulatory compliance
- Collaborate with venue managers and senior leadership to hit operational targets
- Find practical improvements in productivity, workflow and cost management
- Hold high standards in a large-scale, fast-paced setting and foster a positive, accountable kitchen culture
Requirements & Eligibility
- Proven experience as a Group Executive Chef, Executive Chef or in an equivalent senior culinary position
- Demonstrated responsibility for large kitchen teams and complex operations
- Experience running high-volume food production environments
- Strong knowledge of food costing, budgeting, labour control and purchasing
- A demonstrated commercial grasp of what drives kitchen profitability
- Menu development experience and a record of keeping food standards consistent
- Proven ability to recruit, train, mentor and retain kitchen staff
- Strong people-management, communication and organisational skills
- Able to lead strategically and still be hands-on when required
- Multi-venue hotel or hospitality experience is highly regarded
- Knowledge of food safety, workplace health and safety and regulatory requirements
- International recruitment or sponsorship experience is advantageous
- Able to provide verifiable evidence of relevant employment experience and senior responsibilities, with sponsorship available for eligible candidates
