Great food takes more than good recipes. It needs a chef who manages quality, keeps costs in check, supports the team and owns every dish that leaves the kitchen, and an established Victorian hospitality business is looking for exactly that in an experienced Indian Chef.
You will bring strong hands-on skill in Hyderabadi Dum Biryani, Tandoor cooking and South Indian tiffins, and help drive efficient kitchen operations and team development. Expect real responsibility, a say in menu and operational decisions, and authentic culinary standards to uphold. Key Responsibilities
- Own the preparation and quality of the Indian menu, including Hyderabadi Dum Biryani made with authentic techniques and established recipes
- Cook Tandoor dishes and South Indian tiffins
- Contribute to menu development while keeping recipes consistent
- Run daily food prep and mise en place, check deliveries and monitor food quality
- Manage kitchen equipment and keep cooking temperatures appropriate
- Help with food costing, ordering and portion control, and keep storage and stock rotation efficient
- Prepare meals for guests with allergies and dietary requirements
- Supervise and support the kitchen team, training and guiding junior members
- Keep the kitchen clean and organised, making sure food safety and hygiene requirements and applicable food-handling and workplace regulations are consistently met
Requirements & Eligibility
- Relevant culinary trade qualification or commercial cookery certification
- Minimum 1 year of relevant industry experience, including previous work as a Chef, Sous Chef or equivalent
- Strong Hyderabadi Dum Biryani production capability, plus practical Tandoor cooking experience
- Experience preparing South Indian tiffins and authentic Indian dishes
- Experience managing food costs, portion control, kitchen ordering and stock management
- Able to schedule, supervise or train kitchen staff, with strong communication and team leadership
- Current Food Safety Supervisor certification is highly regarded
- Able to work independently and own your responsibilities, with a reliable, proactive approach and strong organisational and problem-solving skills
