Head Chef

This is a senior kitchen leadership position for a chef who is as comfortable with a cost report as with a busy pass. A well-established hospitality venue wants a skilled, commercially focused Head Chef to take charge of its kitchen, drawing on strong leadership, operational and financial management skills.

You will steer daily kitchen performance, grow your team, protect food quality and manage costs, while keeping the kitchen safe and efficient. There is also genuine scope to shape menus, kitchen systems and the future direction of the culinary offering. For experienced chefs running kitchens in Dubai, Doha or Riyadh, it is a considered next step.

Key Responsibilities

  • Own the kitchen's daily operations and its performance across every service period
  • Lead the brigade, coordinating daily staffing and managing labour costs and rosters
  • Hold food production to a consistently high standard, watching portion control, presentation and overall quality
  • Design efficient kitchen systems, standard recipes and operating procedures, and put them into practice
  • Handle food purchasing and supplier relationships, tracking inventory, stock movement, rotation and ordering
  • Keep food costs in check, minimise waste and monitor kitchen budgets against financial targets
  • Develop and refresh menus and seasonal offerings
  • Recruit, onboard, train and mentor kitchen staff, managing their performance through development reviews
  • Ensure compliance with food safety and HACCP requirements and maintain workplace health and safety standards

Requirements & Eligibility

  • Proven experience in a Head Chef or Senior Sous Chef position, with a track record of running a busy restaurant kitchen
  • Demonstrated experience keeping food costs and kitchen labour costs under control, backed by strong operational and financial management ability
  • Strong skills in leading a team and managing staff
  • Experience building and putting kitchen systems in place, and the ability to handle suppliers and purchasing
  • Excellent knowledge of HACCP principles and food safety
  • A strong understanding of modern Australian cuisine, with the ability to create menus that are both high quality and commercially viable
  • Excellent problem-solving ability, strong organisational and communication skills, and the composure to hold high standards under pressure
  • Suitable international candidates may be eligible for visa sponsorship
