Line Chef

A new, premium Italian-inspired restaurant in Dunedin, New Zealand, is building its brigade from the ground up and needs an experienced Chef de Partie it can rely on.
Because the kitchen is just opening, you will help set its standards from day one, cooking with seasonal produce and contributing to fresh pasta, pizzettas and other Italian-inspired plates. The owners want chefs with genuine commercial kitchen experience who take ownership of their section.
Bring proven technique, consistency, organisation and composure in professional service. For chefs currently working in Italian kitchens in Dubai, Doha or Abu Dhabi, this is a considered next move.
Key Responsibilities
- Own an allocated section throughout prep and service, setting up mise en place so it is fully ready each day
- Cook and plate to established recipes and presentation standards, with portions, quality and timing consistent all service
- Help produce fresh pasta and traditional doughs
- Support ordering, stock control, inventory processes and food cost management
- Meet New Zealand food safety and hygiene requirements while keeping your station clean, organised and efficient
- Work closely with the Head Chef, Sous Chef and the rest of the kitchen team
- Help shape a disciplined, professional kitchen by contributing to team development and strong working practices
Requirements & Eligibility
- Minimum 3–5 years of professional chef experience in a relevant role, proven in a commercial kitchen and through busy or high-volume services
- Italian cuisine experience is strongly preferred
- Demonstrated ability to run a kitchen section on your own
- Strong knowledge of food preparation, food safety and hygiene, plus an understanding of stock control and commercial kitchen systems
- A relevant cookery qualification such as NZ Level 4 or equivalent is preferred
- Well organised and detail-focused, able to hold standards steady under pressure
- Willing to work evenings and weekends in a six-day operation
- Applicants must hold legal work rights in New Zealand or meet Accredited Employer Work Visa requirements
- Overseas candidates with suitable experience and qualifications may be eligible for sponsorship
