Restaurant Manager

An established fine dining restaurant in Victoria, built on a farm-to-table philosophy, wants an accomplished leader who has genuinely delivered outstanding service and run strong front-of-house operations.

Every part of your background, from leadership to qualifications and experience, should be verifiable. You will define the guest experience, develop the service team and hold the operation to the benchmark expected of a premium dining room. Key Responsibilities

  • Take visible leadership on the floor each service, establishing a consistently high bar for polished, attentive hospitality
  • Handle bookings, table plans, VIP arrangements, special requests and guest preferences, staying in close contact with diners throughout their meal
  • Brief the team before each service on priorities, and develop service staff through training, coaching and mentoring
  • Work hand in hand with the chefs so kitchen and dining room run smoothly together
  • Plan weekly rosters to match events, bookings, operational requirements and seasonal demand, monitoring labour performance and assisting with workforce planning
  • Manage drinks and service stock levels and purchasing, keeping track of breakage, wastage and usage so costs stay under control
  • Maintain the venue's operating systems and help produce accurate daily reporting
  • Look for improvements in guest satisfaction, efficiency and the consistency of service
  • Protect responsible service, food safety, hygiene and workplace health and safety standards, and keep the venue compliant with its procedures, licensing requirements and applicable regulations

Requirements & Eligibility

  • Demonstrated experience as a Restaurant Manager, Assistant Restaurant Manager, Maître d' or senior front-of-house leader, gained mainly in fine dining, premium restaurants or similarly high-standard venues
  • Hospitality experience gained internationally is highly desirable
  • A record of building and leading service teams, with a solid understanding of cost management, stock control, labour planning and restaurant operations
  • Confidence with wine, including presenting and explaining international selections to guests; a minimum WSET qualification is required
  • Excellent English communication skills, while further European language skills will be advantageous
  • Calm professionalism in leading a team and looking after guests, with a sharp eye for detail and a commitment to premium standards
  • Readiness to supply evidence of your qualifications, professional experience and employment history so they can be verified
  • Sponsorship may be considered for international candidates with suitable experience, depending on eligibility and applicable Australian visa requirements
