Sous chef and Head chef

A professional hospitality operation in Wollongong is looking for a skilled culinary leader who takes pride in consistency, high kitchen standards and developing people. The role reaches well beyond cooking into team growth, kitchen performance and operational excellence.

It is open to an established Head Chef or an experienced Sous Chef ready for the next level. Either way, you will need strong culinary discipline, initiative and a hands-on leadership style, and experience with Italian cuisine, pizza and pasta will be highly valued.

For chefs leading kitchens in Dubai, Abu Dhabi or Doha, this is a considered career step to the New South Wales coast.

Key Responsibilities

  • Direct kitchen operations so service runs smoothly, coordinating preparation across every section and taking charge of service when needed
  • Define and uphold standards for food quality, consistency and presentation, working hands-on through busy, high-volume periods
  • Motivate, train and develop chefs, cooks and junior staff in recipes, preparation methods and kitchen standards
  • Develop and refine menus, recipes, specials and seasonal dishes
  • Control portion sizes, food costs, waste and kitchen profitability, and oversee purchasing, stock rotation, inventory and suppliers
  • Help with rosters, scheduling and labour planning
  • Keep food safety, hygiene and workplace practices effective in a clean, structured and well-organised kitchen
  • Spot ways to improve workflow and efficiency, and support management with kitchen planning and operational decisions
  • Collaborate with front-of-house and management while building a respectful, positive, performance-driven team

Requirements & Eligibility

  • Proven experience as a Head Chef, Sous Chef or in a senior culinary position, with a demonstrated ability to lead and grow a kitchen team
  • A strong commitment to consistency and food quality, and the confidence to work in a fast-paced professional kitchen
  • Sound understanding of food costs, stock control and waste management, plus strong food safety and hygiene knowledge
  • Effective team leadership and communication, with an organised, dependable and professional work approach
  • Flexibility to cover weekends and rotating rosters
  • Italian cuisine experience strongly regarded, and pizza and pasta preparation experience highly regarded
  • Relevant culinary qualifications or equivalent industry experience advantageous
  • Candidates needing visa sponsorship may be considered subject to eligibility, and visa sponsorship is available for the right candidate
