Sous Chef

A long-established Italian restaurant in Cowes, Victoria, is looking for an experienced Sous Chef, or a capable Chef de Partie ready to move into leadership, as a considered next step in a culinary career.
Working side by side with the Head Chef, you will shape daily operations, team development, specials and the direction of the menu. Fresh pasta sits at the heart of the kitchen, so strength here is highly valued.
The kitchen is stable and settled. Accommodation is provided, relocation assistance is offered to the right candidate and visa sponsorship is available to eligible applicants, a welcome combination if you are planning a move from Dubai or elsewhere in the Gulf.
Key Responsibilities
- Help lead and coordinate the kitchen's daily operations, stepping up to run the team whenever the Head Chef is away
- Play a part in recruiting, training and developing junior staff
- Take charge of preparing and serving fresh pasta dishes
- Hold consistent standards in food preparation and presentation
- Plan and organise each day's kitchen prep
- Hand out tasks to the brigade effectively
- Keep a close eye on workflow and service at peak times
- Bring creative ideas to specials and menu development
- Move between kitchen sections whenever required
- Keep the kitchen clean, safe and well organised
- Support efficient management of stock and ingredients
Requirements & Eligibility
- Strong skills in preparing fresh pasta
- 2–3 years of experience as a Sous Chef, or proven readiness to step up from a senior Chef de Partie position
- A background supervising or supporting junior chefs, with strong leadership and communication skills
- Capable of managing a fast-paced kitchen, with good organisational and delegation skills
- A high level of reliability and professionalism, and a strong focus on food quality and consistency
