For chefs running sections in premium kitchens in Dubai, Doha or Riyadh, this Canberra opening is a considered step into leadership. An upscale Japanese restaurant in the Australian Capital Territory (ACT) is looking for a Sous Chef with drive and capability to join the heart of its kitchen.
Expect a role that goes beyond cooking, with real accountability for how the kitchen performs, how the team is led and how service lands. The menu pairs Japanese technique and tradition with contemporary plating and top Australian produce. Working hand in hand with the senior chefs, you will hold standards, steer service, grow the team's skills and check that each plate leaves the pass at the expected level of quality and consistency.
Key Responsibilities
- Share leadership of the brigade and day-to-day kitchen operations, and take full charge of the kitchen whenever the senior culinary leaders are away
- Keep prep and service moving smoothly, directing and supervising cooks during each service
- Produce Japanese-inspired plates at a premium level, with tight control of quality, consistency, portions and plating
- Contribute to menus and seasonal specials with the head chefs, including creating and trialling new recipes
- Coach junior cooks through practical, on-the-job guidance
- Review how productive the kitchen is and suggest efficiency gains
- Support ordering, stock control and proper storage of food, rotating stock and cutting waste
- Help keep food and labour costs in check
- Apply rigorous food safety, hygiene and workplace safety practices
- Make sure equipment, benches and prep areas are well maintained, and that the kitchen stays tidy and professional
Requirements & Eligibility
- A track record as Sous Chef, Junior Sous Chef or in another senior chef role, within a high-volume professional kitchen or premium restaurant
- Prior work with Japanese cuisine is strongly preferred
- Excellent cooking ability, sound command of professional kitchen procedure and real enthusiasm for great ingredients and polished plating
- Capable of leading, organising and inspiring a brigade, with a history of mentoring junior chefs and lifting team skills
- In-depth understanding of hygiene and food safety practice
- A sharp eye for detail and consistent results
- Comfortable balancing several kitchen priorities when service is busy
- Clear communication and good interpersonal skills, along with strong organisational and time-management ability
- Dependable, adaptable and committed, and free to work evenings, weekends and public holidays
- Holding relevant culinary qualifications is desirable
- Applicants from overseas must satisfy the applicable Australian employment and sponsorship requirements
- Ready to move to the Australian Capital Territory
