The role is permanent and full-time, offering a minimum of 40 hours weekly. Sponsorship under the Accredited Employer Work Visa (AEWV) is available for the right candidate, and the door is open to New Zealand residents as well as international candidates who meet the requirements.

Key Responsibilities

  • Shape and coordinate food production throughout the hotel's kitchen outlets, approving every prepared item and safeguarding the finest culinary standards.
  • Oversee preparation, rotation and mise en place with care, correcting where needed so sections and staff are fully prepared before the first guest is served.
  • Keep staffing balanced through roster oversight, delegate to junior chefs and lend a hand on any section to prepare, cook and serve.
  • Manage food cost performance through considered stock rotation, precise ordering and par levels, keeping waste and spoilage to a minimum in storage.
  • Recruit, train and develop the kitchen team, strengthening productivity and a harmonious, high-performing culture.
  • Maintain an immaculate, safe and hygienic kitchen, honouring WHS guidelines, food safety standards and the hotel's grooming requirements.
  • Collaborate closely with the F&B Manager, outlet supervisors and front-of-house colleagues for seamless operations across all venues.
  • Bring calm, confident leadership to day-to-day service so each outlet runs to the same standard.

Requirements & Eligibility

  • A relevant trade qualification must be held, such as a Certificate in Cookery Level 4 or equivalent; or a minimum of three years of relevant experience as a Sous Chef or senior chef in a comparable kitchen environment.
  • Proven experience leading kitchen operations across multiple outlets in a premium hotel or restaurant.
  • Strong technical cooking skills and the ability to keep culinary standards high consistently, across every service.
  • Demonstrated experience in leading, training and developing kitchen teams and managing day-to-day kitchen operations with assurance.
  • Solid understanding of food cost management, stock control and the financial targets of a kitchen, together with a current Food Safety certificate and full working knowledge of WHS requirements in commercial kitchens.
  • Flexibility to work a rotating roster including weekends, evenings and public holidays.
