For an experienced hospitality leader, few briefs match the chance to shape a venue from day one. A newly established premium Italian restaurant in New South Wales needs a General Manager who can turn a brand-new site into a fully structured, high-performing operation.
You will not be inheriting someone else's playbook. The brief covers the whole business: setting up the FOH structure, recruiting the opening team, putting systems in place, keeping costs under control and holding service to an exceptional standard. Candidates will need to show their leadership through real venue results and previous operational responsibility.

Key Responsibilities
- Drive pre-opening preparation and own the venue's operational readiness
- Design the FOH structure, floor plans and service workflows, write the SOPs and daily operating procedures the team will follow, and run opening and closing systems across the venue
- Hire the opening team, then interview, onboard, train and develop hospitality staff into a high-performing group
- Set service expectations and performance standards, coaching managers and staff toward a consistent service culture
- Lead large FOH and bar teams through daily service, staying hands-on on the floor while keeping commercial oversight
- Build rosters, track staffing needs and keep labour expenditure, wage costs and productivity in check
- Run the restaurant POS and other operational platforms, including Deputy
- Take charge of premium beverage operations across wine, spirits and cocktails, watching beverage costs, GP, pricing and margins
- Handle purchasing, look after supplier relationships and negotiate terms that support commercial outcomes
- Track service quality, guest experience and operational performance, spotting operational gaps and bringing in effective fixes
- Uphold RSA, WHS and all restaurant compliance obligations
Requirements & Eligibility
- A strong track record in senior restaurant or hospitality management, including running premium or high-volume restaurant operations
- Proven experience opening or establishing a new hospitality venue, with a verifiable history of venues you have managed, launched or led operationally
- Experience leading substantial FOH and bar teams, backed by strong recruitment, staff training and leadership experience
- A hands-on understanding of how a restaurant floor operates
- Strong knowledge of wine, spirits, cocktails and beverage service, plus experience managing beverage GP, costing, pricing and margins
- Practical experience handling rosters, labour budgets and wage control
- Experience using POS and restaurant management platforms
- Strong purchasing and supplier negotiation experience
- Sound understanding of RSA, WHS and restaurant compliance
- The ability to develop systems and procedures from the ground up, along with strong commercial awareness and operational decision-making skills
- A credible career history that demonstrates your previous hospitality leadership
