Whether you cook in Dubai, Doha or Riyadh, a considered next move could lead to Sydney. An established hospitality group in the city is seeking a Tandoori and Curry Chef to lead its tandoor and curry work within a polished, professional kitchen.
The position calls for a chef of real depth in Indian cuisine, comfortable with the pace of a high-volume dining room and assured enough to mentor junior cooks. There is also scope to influence the menu through new dishes. The role is full-time and stable, and sponsorship is available for the right candidate.

Key Responsibilities
- Direct the Tandoor section and its daily operation
- Craft naan, roti, kebabs, tikka and further tandoori dishes
- Prepare an extensive selection of Indian curries, classic and contemporary
- Oversee marinades, gravies, sauces, stocks and mise en place
- Ensure consistency, portion control and refined presentation
- Perform with composure during high-volume service
- Uphold food safety and kitchen hygiene standards
- Manage wastage and assist with stock management
- Contribute to menu development and new dishes, and mentor junior kitchen staff
Requirements & Eligibility
- Minimum 5 years' relevant experience
- Strong Tandoor and Curry section experience
- Excellent knowledge of Indian spices, marinades and cooking techniques, backed by strong knife and preparation skills
- Experience in a busy, high-volume restaurant setting
- Maintains quality and consistency under pressure, with a good understanding of food safety and hygiene
- A reliable, professional manner and strong teamwork and communication
- Available for evenings and weekends as required
